Description
A round walnut cutting board is harder to build than a rectangular one. Every wedge has to land true. The grain has to read as one piece, not a patchwork. The Compass is that work — fifteen and a half inches across, cut from black walnut, with the end grain running clean from centre to edge.
First, the assembly. I glue every Compass round walnut cutting board from wedges that radiate out from the center, so the figure carries continuously around the disc. Because the build is harder, the result is rarer. As a result, most round boards on the market are flat-grain or laminated — this is the only round end grain butcher block in my shop.
What makes a round walnut cutting board different
Round boards serve differently than rectangular ones. Meanwhile, they sit at the centre of the table and rotate freely. Most importantly, the round form forces a craftsman to solve grain alignment at every wedge — there are no straight cuts to hide behind. Either way you use it, the result is a board that functions as a prep surface, a serving piece, and a centerpiece.
How to use one
Fifteen and a half inches across is enough for a full charcuterie spread, a whole-bird carve, or a Sunday roast. So when company comes, the Compass moves from prep counter to dinner table without changing roles. Afterwards, mineral oil and beeswax restore the surface in a few minutes.
Care, custom work, and shipping
First, wash with warm soapy water and dry flat. Second, never let the board soak. Finally, condition with butcher block oil every quarter — the wood will deepen and darken with age.
