First, the build. I glue every edge grain cutting board from vertical-strip hardwood: walnut, cherry, or maple. Because edge grain runs the strong axis of the wood up to meet the blade, the surface holds up to years of daily prep without scarring. As a result, this is the working middle ground — kinder than flat grain, more affordable than end grain.
What makes an edge grain cutting board different
Most cutting boards sold in big-box stores are flat grain — wood laid down sideways. Meanwhile, edge grain stands the long strips up vertically, which slows the wear pattern and lets the figure of the wood read in clean parallel ribbons. Most importantly, the construction is light enough that the board moves easily between counter and sink without becoming a burden.
How to choose one
Start with size. So a single cook leans Cabin (12×10); a working kitchen leans Homestead (18×12 or 15×10.5). Then choose the wood — walnut for depth, cherry for warmth, maple for a clean canvas. Either way, every edge grain board ships with mineral oil and beeswax finish, hand-applied in Virden, Manitoba.
Care, custom work, and shipping
First, wash with warm soapy water and dry flat. Second, never soak. Finally, condition with butcher block oil monthly for the first few months, then every quarter.
