This maple walnut cutting board runs eighteen by twelve at a full inch and a half thick, and the stepped, blocky face reads more like a fortress wall than a kitchen tool. I built it in my Virden, Manitoba woodshop from the offcuts left over from other boards, so this exact piece exists once.
First, the build. I stand every block of hard maple and black walnut on end before glue-up, which turns the wood fibres vertical so a blade parts them instead of cutting across them. Because the pieces came from leftover stock rather than fresh-milled strips, the courses stagger instead of repeating, and that offset is what gives the top edge its battlement line.
What makes this maple walnut cutting board different
Most end grain boards repeat one tidy checkerboard across the whole face. This one does not. Second, the two species each do a job: hard maple measures about 1450 on the Janka hardness scale and absorbs the daily work, while black walnut sits near 1010 and stays easier on a sharp edge. As a result the surface is hard where it needs to be and forgiving where it counts. Meanwhile the stepped sides show all 1.5 inches of end grain from across the room.
How to use one
Eighteen by twelve handles a full prep session without turning the board sideways — a whole chicken, a winter squash, the entire mise for Sunday dinner. Care, custom work, and shipping
I finish every board with Board Butter, the conditioner I blend in the shop, and a 2 oz tin ships in the box with it. First, wash with warm soapy water and dry it flat. Second, never let it soak, and keep it out of the dishwasher. Finally, rub on more Board Butter monthly at first and quarterly afterwards, which keeps the surface fed rather than dry. Beautiful craftsmanship , almost too nice that do not want to use it for what it is intended for , took a while..but finally gathered up the courage to use it as a cutting board and not a conversation piece, the end grain holds up incredible! Highly recommended ! ⭐️⭐️⭐️⭐️⭐️
